Welcome to the debut of our new featured column: Game Day Snacks! Our mission is to move beyond Doritos and Mountain Dew (not that we don’t all love those – but, hey, a little variety, right? 😉 ) and offer suggestions on good eats to enhance your game day gatherings.
To our way of thinking, what makes for great game day offerings include:
- Crowd pleasers – stuff everybody loves to eat!
- Easy food – the idea is to feed all the gamers so that everyone can keep on gaming and not to spend all your time in the kitchen while everyone else gets to play.
- And foods that can be kept out buffet style for gamers to enjoy at their leisure, while enduring (oftentimes) hours of game play.
So, to kick everything off, we are presenting Magic Missile Meatballs! (I call them thus because every time I’ve served them, whether at games or parties, they’ve always been a hit!)
Meatballs are a great game day offering because they can be kept warm for hours in a crockpot, and they can be served in various ways: 1) You could purchase sub rolls and offer them as a sandwich; 2) Similarly, you could try slider rolls for multiple mini-sandwiches; or 3) You could just serve as is along with some other nibbles on a “snack” buffet.
Also, as with any meatball, you can always make a giant batch of these and keep whatever you aren’t planing to eat/serve that day in the freezer for future use. (Although, be forewarned – these babies will go quickly!)
Okay, so here’s the how-to for Magic Missile Meatballs (aka buffalo chicken meatballs):
For the Meatballs:
1 pound ground chicken
2 eggs beaten with 1/2 cup milk
1/2 cup blue cheese crumbles
1 cup bread crumbs
1 small onion (or 1/2 a large onion) minced or grated
2-3 cloves minced garlic
1 teaspoon salt
Ground pepper to taste
1/4 cup minced fresh cilantro or parsley
Mix together all ingredients in a large bowl with hands. Form into meatballs. (Makes 30-40 meatballs depending on size.) Bake at 350 degrees for 30 minutes. (I like to bake them on a cookie sheet lined with nonstick aluminum foil.)
For the Sauce:
I’d love to say I have a secret recipe for some personalized buffalo sauce, but honestly I just like to buy a bottle of Ken’s Steakhouse Buffalo Wing Sauce from the grocery. It’s ready made, tastes great, and is so easy – just open and pour! (Feel free to make your own sauce, if you’d like, but, honestly, Ken’s tastes great, and as I mentioned – is so easy.) You could also Try Frank’s brand buffalo wing sauce. I’ve never used this one, which I realize sounds sacrilegious, but Ken’s is what my grocer had in stock when I went looking, and it tasted great to me, so I’ve used it ever since. You know what they say, “what ain’t broke. . .” 🙂
Assembling Your Magic Missiles:
Now all that’s left to do is throw everything in a crockpot and enjoy the game! Just toss in your baked meatballs and pour your buffalo sauce over top. Then give it all a good stir to make sure your meatballs are well coated. Put your crockpot on the low setting (or warm setting if you have one) and leave out for your fellow gamers to enjoy.
Tip: Ken’s is a fairly mild buffalo sauce, but if you like your sauce extra spicy, feel free to add hot sauce to taste. If you prefer them flaming hot, you can even rename them! How about some flaming sphere meatballs? 😉
